Italian Risotto Recipes Ingredients: 500g rice, 1 eggplant, 2 tsp salt, 2 finely chopped onions, 1 thinly sliced zucchini, 1/2 thinly sliced red capsicum, 1/2 thinly sliced green capsicum, 60g butter, 40g extra butter, 150g mushrooms, 2 tbsp olive oil, 1 litre water, 2 beef or vegetable stock cubes, 1/2 cup peas, salt & pepper, 3/4 cup freshly grated parmesan cheese, Italian parsley.
Italian Risotto Recipes Method:-The first step is to draw the bitterness out of the eggplant. Cut eggplant into 1cm slices, sprinkle with salt and allow to stand for at least 1 hour. Preheat frying pan, add melted butter and sliced mushrooms and heat for 2 minutes. Remove from heat and set aside. Rinse eggplant, pat dry and finely dice. Heat extra butter in frying pan, olive oil and add diced onion – sautee for 2 minutes.
